Ducasse is a member of that élite group, along with fellow countryman Joel Robuchon, of global chefs, with restaurants in Tokyo, New York, Washington, Las Vegas, London (where his joint at The Dorchester just picked up a third star), Hong Kong etc. etc. When he’s not opening new venues, he’s writing books, running cookery schools and even helping NASA develop food for astronauts. As well as his flagship venture at the Plaza Athenée hotel and the Spoon concept restaurant, Ducasse is also now in charge at the Jules Verne restaurant in the Eiffel Tower.
