Thanks to Experimental Group – the bar empire that includes the popular Prescription and Experimental Cocktail Clubs – and independent places like Gocce and Little Red Door, there’s no longer a lack of stylish lounges for lovers of the cocktail craft in Paris. Unless, of course, you’re a bit tired of the entire speakeasy concept.

High-ceilinged, bright and airy, CopperBay in the 10th breaks with the ‘hidden gem’ theatricality and strips things back to the art of drink-making and carefree socializing. Instead of velvet couches and Chesterfields, this feels more like an open plan kitchen than a bar. And everybody knows that the kitchen is the heart of any party.

There’s a selection of snacks and craft beers, but the cocktails are well worth the price of roughly a tenner; the place is owned and run by a trio of veteran mixologists, including the former bar manager from W Paris. Just be aware that, although they call themselves the Mermaids, their magic potions will leave you legless rather than grow you a pair.
