A whitewashed coal bunker is the setting for Darío Barrio’s eponymous restaurant, which opened to rave reviews in 2004. A disco-funky staircase, illuminated from within, leads down to the brick-walled space which still retains the old arches and slightly uneven proportions of its former calling. The food, however, is anything but a historical reference. Having trained under chefs including Larumbe, Subijana and yes, Ferran Adriá, Barrio’s dishes are a constant exploration of tastes and textures, combined with the classic Spanish consideration for fresh market produce and local ingredients. Some of his most famous dishes include oxtail with chocolate and wine, and a variation on huevos estrellados, turning the classic Spanish dish into truffled eggs with potato foam. Better than a lump of coal at Christmas anyday – and you don’t even have to be on the ‘good’ list to get in.
