CLOSED. This restaurant from Rasmus Kjær may be located right next to Bo Bech’s buzzy Geist on Kongens Nytorv but, rather than being another sceney hotspot, Signatur is a dansk spisehus – a Danish eatery – as proclaimed by the sign outside.

Open all day, the setting is informal (in that cosy, design-packed Danish way) with communal long tables providing most of the covers – make sure to book a private table if you require more privacy – and the menu full of dishes as if it had been written by your Danish granny. Except that she probably wouldn’t be nearly as religious about the use of seasonal, market-fresh quality ingredients as award-winning chef Kjær.

You’ll need to go for dinner to have the full range available – you could do worse than the ox jaws or a flæskestegssandwich (roast pork slider) and an order of pork cracklings and quail eggs snacks to pass the wait – but breakfast is also recommendable (don’t deny yourself a brunsviger pastry) and the smørrebrød offering at lunch is similarly respectable (for those in a hurry, the quick-serve business lunch is good value with an assortment of three pieces).

For traditional Danish cuisine in Copenhagen, Adam Aamann’s eponymous tavern on Østerbro might have the edge for smørrebrød and the Jacobsens’s Restaurant Paustian in the Nordhavn district a slightly more contemporary dining experience. However, for a quality taste of local in the center of town, then you’re in excellent hands here, be it for business, leisure or even a date.
