After abandoning big-name Noma in 2009, chef Christian Pugsili and waiter Kim Rossen opened their own, and highly-anticipated, venture. And critics have taken note, with Relæ already awarded a coveted Michelin star.

Set in an unassuming basement in a troubled part of Nørrebro, there’s little sign of its fine-dining pedigree at first. No presumptuous decor, penguin-stiff waiters or stomach-churning prices. Instead, their considerable skill has been saved for the food. Simple, good ingredients are combined for innovative, though occasionally more daring than delicious, dishes, the Danish flavours complimented by Puglisi’s Italian influences in two set menus; one for vegetarians, the other for ‘omnivores’.

The price level has been set to keep the place accessible to most – the DKK 35 unlimited water option is a nice touch – which in turn means that service at times can be somewhat compromised and you’ll need to finish up in two hours, so the next lot of diners can get in.

That’s not to say the space comes entirely devoid of style or sense of humour – sit down and your menu and cutlery can be found in a little pull-out drawer under the table, and there’s only one glass for both red and white wine. And if you leave it too late to get one of the sought-after tables, or fancy something a little lighter, pop next door to Manfreds & Vin, also owned by Pugsili, to try your luck.
