As part of its major make-over, the Hotel d’Angleterre has finally gotten a Michelin-starred trophy restaurant that befits its grand dame status.

Commanding the kitchen is the young Christian Gadient, following predecessor Ronny Emborg’s line. He made his name at AOC with his elBulli-inspired avant-garde cuisine and earned Marchal a Michelin star with a more classic French menu. Think traditional delicacies such as lobster, truffle and fois gras, rather than roots, live ants or other new Nordic ‘goodies’.

The format is also more traditional, à la carte as opposed to the increasingly favoured tasting menu, meaning that you’re able to tailor the size of your bill according to your wallet. Restrain yourself when ordering, and it’s as suitable for a limited-budget treat as for an expense account blowout, without having to confine yourself to the breakfast buffet or the cheaper lunch menu.

Dishes come starter-sized, with the exception of the larger livretter (favourites) such as the chateaubriand that must be ordered by at least two people. Try out as many as you can stomach and, even if you don’t really have room for dessert, don’t deny yourself a sumptuous flødebolle, yoghurt foam on a base of marzipan and covered with crisp, dark chocolate.

While Marchal is unlikely to provoke your senses the way a meal at Noma, Geranium or Relæ can, it still provides an impeccable gourmet experience and a sleek setting that is plush without being gaudy – perfect for both business and living it up on an impress-his-pants-off date.
