You wouldn’t normally bet on a young American chef to become the toast of the town in Paris, but Daniel Rose did just that with his Spring restaurant, a bistronomic that offered up an affordable four-course gastronomy menu based on ingredients procured from the local market. A solid fully-booked success, Rose is now moving the restaurant to a space close to the Louvre, reopening sometime in 2010, but in the meantime he’ll be cooking on the rotisserie grill in the old space. Not exactly a pop-up restaurant, but get in on the act with the three-course Breton chicken set menu (suckling pig on Thursdays), priced at EUR 29-35 depending on how hungry you are.
