Classic, traditional and formal, Jamin is a bit of a quiet Parisian institution, having helped shaped the careers of the likes of Joel Robuchon, who earned his third Michelin star here. Post-80s heyday, it’s been picked up and revamped by Alain Pras into its current incarnation, a sensitive homage to Parisian gastronomy – with the obligatory modern twist. The menu features both old school French recipes, such as the Paris Brest, a crown of choux pastry filled with praline butter cream and sprinkled with almonds, as well as Asian style dishes with a Gallic twist – think sea bass in a creamy coconut-curry sauce. The interiors follow a similar duality, featuring lithographs by the likes of Jean Cocteau and Joan Miro, as well as Chinese and Egyptian antiques.
