This exquisite madrileño fusion newbie may be named after the Tokyo stock exchange index, but its prices won’t crash your personal portfolio.

Ringing the bell for affordable fine cuisine is Peruvian chef Luis Arévalo, formerly of 99 Sushi Bar and considered one of the best in the business. Accordingly, the menu here is a blend of Peru and Japan, with bite-sized delicacies awaiting you like urchin ceviche with algae, salmon tataki with jalapeño peppers and niku-dangu meatballs.

It’s gourmet nosh but in a relaxed, trendy setting, not least thanks to the talented interior designer Ignacio García de Vinuesa, and located in a busy gastro corner of town. Sitting next to Spanish-Peruvian favourite Astrid & Gastón and across from hotspot Bar Tómate, consider popping into the latter for a drink before or after.
