Ferran Adrià’s molecular gastronomy may still be doing its victory parade around the globe, inspiring ambitious chefs to dabble in foam and deconstructed flavours, but other local top chefs have started to move on. Or perhaps its more of a case of looking back, as they return to the traditional dishes of the Catalan kitchen, reinventing old classics with better raw ingredients and improved techniques.
And so Fermí Puig, the Michelin-starred chef from Hotel Majestic’s Drolma (where starters begin at a hearty EUR 39), treats your palate to new old specialties like poached eggs, stuffed breaded onions and chicken cannelloni. It’s only the food that’s rustic, though – the interior is well up-to-date and keeps the rest of your senses firmly in a modern cosmopolitan setting.
