If you ever needed a recommendation for a sushi joint, Ferran Adrià has been praising Hiddeki Matsuhisha’s Shunka like an over-eager PR trainee for years. And just a few blocks away, Hiddeki’s new temple adds a Koy to its name and aims for a sleeker, more upscale dining experience compared to the cosy original. Hiddeki himself oversaw the interior design, and the result is surprisingly pleasing. The focus, however, remains on the quality of the raw materials so it’s mainly fresh dead fish on rice, in addition to house specialties like flamed salmon and feet of crayfish.
